Happy Holiday's Everyone!


Sorry I've been away for so long, as you know there are so many things to do and not enough time during the holiday season! While I have been away I've seemed to somehow accumulate several great items to show you (and not so great), as well as new and old recipes to share with you that I will be fix'n for the holiday..., including a family recipe for Carrot Cake (insert drool)! Oh, and of course speaking about food, tonight I came home to a fab dinner done by the hubby (forgot photo, insert mad face); grilled sirloin, coconut prawns and french bread, yummm! Oh and for a quick dipping sauce for the prawns I mixed orange marmalade and Sriracha sauce! I'm sure you could also mix a store bought mango chutney with Siracha and get the same great sweet and spicy pizazz, oooo-la-la!

So just a quick note to say hello and wish you all a spectacular holiday...my oldest son is coming home this year for Christmas so both of my sons will be home, looking forward to it, I love family time.

Drapes were purchased at IKEA, rods at Fred Meyers (aka Krogers in some areas), light on the right is from T.J. Maxx, very heavy crystal and only $50! The flocked tree we got at a local u-cut farm and had it flocked there and bagged, although by time we got home for some reason most of it fell off (insert very sad face). I love snow flocked trees (will show you the heavier flock from last year), you don't see them as nearly as you might have in the 70's, but I soooo say they are CHIC! Next year it will be pink or lavender! Do you FLOCK your tree? Would love to see some photos!

Kalua Pig...best marinated overnight

I love Kalua Pig, well my family loves it even more! I never knew it could be cooked up so easily in the home, not until about 7 years ago (now 14) when discovering this great recipe tweaked to my liking! P.S. I am not an expert recipe writer so please read through the entire recipe to be sure you have all of the required ingredients.

Recipe
5 to 10 pounds (more or less depending on number of guests) of pork butt, boneless country style ribs or pork shoulder (No pork loin, to lean). Place meat into freezer bags or deep bowl/pan marinate in apple juice overnight. Drain pork, place into a large, deep roasting pan…fatty side up.



 


Pour 1/2 of a can or jug of pineapple juice over the pork, or half pineapple, half apple juice.
Pour 3 ounces of any type liquid smoke over the pork.
Cover the entire top of the pork with a thin, but still generous, layer of sea salt or kosher salt or best with Hawaiian Sea Salt if you can find it in your area. Marinade overnight.

Cover the roasting pan with 3 layers of heavy duty aluminum foil.

Bake the pork for 2.5-3 hours 350 degrees. Open up foil, pull out and mash down with potato masher if you can, if tender enough. DO NOT DRAIN OILS or JUICE! Now cover back up tight, drop temp down to 325 degrees for about 2 hours more and forget about it! Take it out of the oven smash down with masher or shred the pork with a large kitchen fork (too hard for me). Let sit 15 min. before serving.

WITH CABBAGE
Cube or strip out entire head of cabbage, cut up one onion, place in frying pan with cup of pork juices, cover on med high, let cook down with lid on. Remove lid once all is soft, add as much cooked kalua pork and juice as desired and turn on high to absorb juices and brown up a little.



Best served over rice or on Hawaiian rolls!

Oooweee-Goooey Cheweee Popcorn


A "Clean Eating" Recipe
**First make popped corn

1/2 C corn,3 Tbsp oil
Measure corn and oil into heavy-bottom pan
Cover and turn heat to medium, leave pan lid slightly ajar to allow steam to escape
When popping slows, remove pan from heat
Add salt and melted butter to taste

 Now the gooey part....
Ingredients

1/4 cup peanut butter
1/2 cup honey
8-10 cups popped popcorn

Directions
Tip: Read through the steps first so you know what you to. You’ll need to work quickly.
Step 1 – In a small pot, warm the honey on high heat. Bring it to a boil.
Step 2 – Let it boil up in the pot about 1 inch and then quickly remove from heat.
Step 3 – Stir in peanut butter with a whisk (pam it) and whisk until smooth. Should be “pourable”.
Step 4 – Pour over the popcorn and mix with a spoon, I use a 9x13 pamed pan. The mixture is hot, so don’t be tempted to mix with your hands.
Step 5 – Serve warm (slightly cooled) or cool completely
